Would it be possible to use Mocha Pro to apply a material with a displacement map?
Currently, no, but please describe exactly what you’re after and we might be able to incorporate it in a later release.
Maybe I’m wrong, but it seems to me that if you can track a mesh, Mocha Pro should also be able to recreate that mesh. And if you can recreate it, you should be able to apply any material you want to it, even those with displacement maps. Does this make any sense to you?
The PowerMesh can be exported to an alembic mesh and then yes, you can add displacement and texture.

You can’t do the material assignment inside Mocha yet though. That would require a significant change to the rendering architecture.
